材料:
雞翅 4支 chicken wings 4
薑 30克 ginger 30g
蔥 30克 green onion 30g
當歸 8公克 chinese angelica 8g
枸杞 10公克 Chinese wolfberry 10g
紹興酒 600毫升 Shaoxing wine 600ml
鹽 2茶匙 salt 2tsp.
米酒 1大匙 cooking rice wine 1tbsp.

做法:
1.先將雞翅放入不鏽鋼保鮮盒中,加入蔥薑。
2.燒一鍋水煮滾,把保鮮盒放入,蓋上鍋蓋,改小火蒸30分鐘。
3.倒入當歸、枸杞、鹽和紹興酒後拌勻,讓雞翅浸泡湯汁中,蓋上蓋子冷藏一天即可食用。

膠原蛋白為人體內重要營養素之一,因其容易隨年齡增長而流失,故需倚靠食物或營養品補充,以持續維持身體良好機能。膠原蛋白主要存在於動物身上,例如豬皮、豬腳、牛筋、雞爪、雞翅、魚皮、魚翅等都是富含膠原蛋白的食物。目前市面上膠原蛋白產品多以保健食品型態販售,如膠原蛋白粉、膠原蛋白錠、膠原蛋白飲等。食用方式偏向保健食品,食用時缺乏鮮明的視覺效果、豐富的味道與口感以及趣味。所以進行以情境式果凍為例之膠原蛋白凍食品之創新加值研究。本研究首先收集市售膠原蛋白與果凍產品進行屬性分析,做為膠原蛋白凍產品開發參考。利用生態養殖之鱸魚魚鱗為主要原料,萃取其中膠原蛋白成分製成果凍型態產品,再將多種水果原汁和養生產品組

合成多種產品,接著以交叉一致性評估去除屬性不容或食材相剋之產品組合,並利用將果雕藝術置入膠原果凍中增加其視覺效果。接著進行初步的產品試吃,刪除可行性較小或原料適配度低之原料組合後加入健康且多元的食材,製作出原料天然、有益健康、具有食用樂趣與消費者接受度高的膠原蛋白創新產品,本研究將可提供農產品之創新及加值之參考。
